Wild Turkey Fried Bites Recipes
Wild Turkey Bites Recipe
Marinate Overnight
Ingredients:
2 Tblsp. Mustard
2 Tblsp. Garlic powder
2 pounds of wild turkey chopped into slices (for strips) or 1 inch squares (for bites)
Mix together, cover, and refridgerate overnight.
Mix 1-Preparation
Mix in first large bowl
Ingredients:
2 Eggs
¼ C. Buttermilk
1 Dash of Sea Salt
2 Dashes of Ground Pepper
Mix ingredients in a large bowl and place your marinated turkey into Mix 1 while you prepare Mix 2
Mix 2-Preparation
Mix in second large bowl
Ingredients:
2 ½ C. Flour
1 Tblsp. Baking powder
1 Tblsp. Sea Salt
2 Tblsp. Ground Peppercorns
Cooking Directions
Put vegetable oil in deep fryer or deep frying pan.
Get oil hot enough to fry.
Remove turkey strips or pieces from Mix 1 and roll it in Mix 2 until a thick coating forms.
Place gently into fryer oil with a long handled metal spoon or spatula.
Fry until pieces float and are a nice golden brown color.
Remove one piece and cut open to test for doneness.
Serving Suggestions
Best served with home fries, salad, corn bread, and ice tea.

Tips on Field Dressing & Storing Wild Turkey Meat
There are a few differences in handling and storage between store bought turkey and wild turkey.
Wild turkeys must be field dressed as soon as the bird is dead.
What you will need:
A sharp knife
Clean paper towels
A cooler with ice
Follow these tips for safe handling of wild turkey in the field:

Wash your hands thouroughly
Clean and sterilize all utensils before processing
After skinning or plucking you can either store it whole or cut into smaller pieces
Can be stored in the refrigerator at 40 degrees Fahrenheit or below for two days safely or in the freezer at 0 degrees Fahrenheit indefinitely.
When freezing wild turkey make sure the "meat is packaged tightly in heavy duty aluminum foil or freezer-grade bags. Don’t forget to label the packaging with the date and type of meat so you can identify it later (MSU, 2018)".

- Remove entrails and crop first so the grains do not start to ferment
- Wipe out cavity with clean paper towel
- If you want to keep the heart and liver store it in a separate plastic bag on ice.
